I mentioned about the sight-seeing of Kawagoe City in my prior post O-mikuji in Chinese and English. Not only I’ve visited shrines in this city but I also I had chance to observe soy sauce storehouse.
They are one of the soy sauce makers in Japan which uses the traditional method to make soy sauce which is rare these days.
They started using these huge buckets↑ in the photo(left) about 180 years ago!! They still use them for the production.
Not like mass production with modern machines they produce a small amount of soy sauce with careful and thorough work and it takes two years to make their soy sauce with this method!!
